With Thanks for Friends who Bake

I wish I could say I baked this cake, but Santa is watching and listening and it's just not true. 

A colleague and I co-hosted a lunch at work today. Sandy did the menu selection and it was healthy and tasty. She chose fruit with a yogurt dip and cookies for dessert. But our friend, Pat, baker of excellence, brought in one of her specialties, this beautiful pineapple upside-down cake. Even if the end of world hadn't been predicted I would have had to have a slice. Pat being the good friend that she is made sure I got a big piece of pineapple and friends, it was as good as it looks. No, it was better than it looks!

I posted the picture on facebook and one of my friends mentioned that it was one of her mother's favorite Christmas cakes, and I remembered it was a favorite of my mother, too. That thought sparked a lot of happy memories of Christmas time past. The memories were simple ones and home baking and visiting the toy departments at the local department stores were favorites. I also loved when my family would bundle up and we'd drive around looking at the Christmas lights. I loved those evenings, snuggled between my mother and my grandmother, long past my bedtime, enjoying the lights. 

The week has been hectic -- mostly with work -- but I did get to Rockefeller Center yesterday and I'll be sharing photos of the tree tomorrow. On Sunday I'll be posting a Christmas gift about which I am so excited, so please, please stop by. Just one little hint for tonight...holiday movies!

I LOVE pineapple-upside-down-cake!!! It's my favorite. I'm actually not really much of a cake fan (more of a pie person) but I love this moist and yummy cake!

This is how I baked my Christmas goodies this year:

1) Drove to Gremler's Bakery, a wonderful little German bakery here in town.
2) Waited in line for abou 10 minutes
3) Pointed at the case and said, "I'll take a dozen of those"
4) Repeated step 3 4 more times
5) Plunked down my check
6) Said "thank you" and walked out the door!

Pineapple Upside Down cake was always a favorite here too. Of course we had a dollop of whipped cream on top. It's a good day to stay warm and cozy. Very cold here this morning. Hope your Saturday is a super one!

Pineapple upside down cake - - - BIG YUM!!! I love that cake. How special that your friend baked it for you all.

Pineapple Upside Down Cake was my Dad's absolute favorite. So we had it many times when I was young. Thanks for conjuring up some sweet memories!!

There were very few things my mom could make...fried chicken, potato salad, peaches and dumplings, and pineapple upside down cake. Just thinking about how she baked it in an iron skillet, wish I had a slice now. Blessings to you,xo,Susie

I've never made a pineapple updside-down cake, but lately I've really been wanting to make one. I'm not sure why, but hopefully I'll be able to try out my baking skills on one soon.
