Pinterest HealthFest -- The Treasure of Vegetables




I chose this photo on Pinterest and I noticed only after I uploaded it that it was from Whole Foods. I live directly between two beautiful Whole Foods stores. One is a little over a mile away and one is slightly less than a mile. They each have a staggeringly wonderful array of vegetables. An array, that would have caused my great-grandmother to wander through the aisles in unbelieving ecstasy at the agricultural miracles she was seeing. I evoke my great-grandmother, for whom I am named, because in the village in the Ukraine in which she lived in for the first forty plus years of her life she lived on root vegetables all the long, long Russian winter.  A tomato or cucumber or a fresh mushroom would have been an incomparable treat.

I was born into a different world and sadly I take these treasures for granted. I find it difficult to make time to cook fresh vegetables, even though they are so easy to buy and so delicious. I like vegetables a lot. I like cabbage and mushrooms and brussel sprouts. And that's only the beginning of my list. But I am lazy when it comes to preparing them. There is no other word to describe it. I will not plead too busy. I cannot lie to the citizens of Buttercupland. I am lazy about vegetables. The awful truth has been spoken.

Laziness, be gone! When I look at vegetables and the gift of health that they provide I know my laziness has to end. January is not just a no spending month, it's an eating vegetables month. I will be at Whole Foods tomorrow morning. It is two blocks from my opthamologist's office, so I have no excuse not to stop in and buy vegetables to prepare over this long weekend.

I am kind of the same of you...but I don't think of those veg as the same as your grandmother's....if they come from halfway around the world which is what I check out first. A quick little story about Whole Foods....when my husband and I did a major renovation job in Va...I used to go to Whole Foods just for calmness...it was like my little place of peace...then when we went back several years later...it was SO busy to me....what a difference a couple of years made...

I love veggies and have some kind at most every meal but breakfast. Fresh veggies are wonderful and taste so different from frozen or canned. I have to be careful not to buy too much at a time so I use them though.

I must admit I like the steam in the bag veggies. Especially the green beans. Once they are steamed in the microwave, I just add a little granulated garlic and some freshly ground pepper. I made a hamburger patty on my Foreman grill and Trader Joe's mashed potatoes. I enjoyed my dinner tonight. Happy weekend to you. xo

Hi Buttercup and happy weekend! We have two Whole Foods close to our home here in GA. I love vegetables and would prepare them more often if the Mr. would eat them too. He will eat raw veg. as a snack but I love cooked cabbage, green beans, corn etc.
It is a fun experience to shop at WF. I am always amazed at their inventory. I love looking at their tea/coffee selections.

Hi Buttercup, we have 2 Whole Foods nearby too, and they have pretty much any veggie you could want. My new kick is parsnips: peel, slice thin and cook in pan of water about 5 minutes. Drain and toss with butter, salt, and pepper.

Buttercup, I love vegetables. I love them all! Boiled, steamed, mashed, fried . . . any way I can get them! I would be a happy vegetarian if I didn't also love a good steak! xxoo

Don't ever take for granted how lucky you are to live so close to Whole Foods. I have to drive three HOURS to get to one! But things are looking up - ours is supposed to open sometime late this year!!

I'm getting better at the creative veggies thing. Just this week, we had Baked Acorn Squash for the first time and it was totally DELICIOUS!!

I keep reading that if we increase our fruits and vegetables and choose them over our delicious sweets, the pounds will begin to melt off us - - - even with little or no exercise. Of course, the way they are prepared is a key factor, too. In the South, many think they have done a good thing when they eat okra - - - deep-fried!!!
I love broccoli lightly cooked and then just shake some Mrs. Dash on top or McCormick's Perfect Pinch Roasted Garlic & Bell Pepper (like Mrs. Dash). It is soooo good.
Hang in there. You have the right mindset and it is the fist big step.

I admit it, I am also veggie lazy. We don't eat vegetables nearly as much as we should. In my defense, though, we live in a very rural area and the closest Whole Foods, Trader's Joe's or whatever type place is almost three hours from us. All we have here is a Walmart and a Piggly Wiggly. Neither one of which is the best for getting fresh veggies.

Well, I am not TOO vegetable lazy! I buy cabbage and steam it with smoked sausage, I buy fresh asparagus and cook it several ways, I buy fresh squash and cook it in the oven in the winter with garlic butter and on the grill in the summer, fresh mushrooms etc.! I love fresh vegetables and would LOVE to live near a Whole Foods! Thanks for sharing this gorgeous array of veggies! HUGS!

I'm trying to play catch up now that I'm feeling a little better. May take me a week. You are so lucky to have a WHOLE FOODS nearby. I LOVE fresh veggies. Cauliflower, asparagus, radishes, snow peas, carrots, celery, kale. Always on the table here.
